Carbonara Zoodles

This recipe is a vegan knock-off of the Italian carbonara pasta, which is classically made with bacon and eggs. It has a rich and creamy consistency, while still feeling like a light meal because the pasta is substituted with zucchini. The smoked tofu tastes similar to bacon, so I was even able to impress an avid meat eater with this 🙂

Ingredients (about 2 servings):

  • 2 zucchini
  • 100g almond butter
  • 160g smoked tofu
  • 1 onion
  • 1 garlic clove
  • 1 tsp lemon juice
  • parsley (around half a bunch)
  • 4 tbsp olive oil

Instructions:

  1. Cut tofu into cubes. Peel & cut onion and garlic and chop. Wash and chop parsley.
  2. Whisk together almond butter and 240ml (1 cup) water.
  3. Wash zucchini and cut into strips (zoodles), for instance with a spiral slicer. Mix them with 2 tbsp olive oil and some salt.
  4. Heat up 2 tbsp olive oil in a pan to roast the tofu in for about 3 minutes. Add garlic and onion and roast for another 3 minutes.
  5. Add almond butter mix, lemon juice and parsley. Salt & pepper to taste. Let it come to a boil to have it thicken a bit.
  6. Gently fold in the zoodles and warm up for about 1-2 minutes. Enjoy!

German recipe:

Zutaten (für etwa 2 Portionen):

  • 2 Zucchini
  • 100g weißes Mandelmuß
  • 160g Räuchertofu
  • 1 Zwiebel
  • 1 Knoblauchzehe
  • 1 TL Zitronensaft
  • Petersilie (etwa 1/2 Bund)
  • 4 EL Olivenöl

Zubereitung:

  1. Tofu würfeln. Zwiebel & Knoblauch schälen und klein hacken. Petersilie waschen & hacken.
  2. Mandelmuß mit einem Schneebesen mit 240ml Wasser vermengen.
  3. Zucchini waschen und z.B. mit einem Spiralschneider in lange Streifen schneiden. Die Zoodles dann mit 2 EL Olivenöl und etwas Salz mischen.
  4. 2 EL Olivenöl in einer Pfanne erhitzen und Tofu darin 3 Minuten anbraten. Zwiebel & Knoblauch hinzufügen und weitere 3 Minuten anbraten.
  5. Nun das Mandelmuß, Zitronensaft & Petersilie hinzufügen. Mit Salz & Pfeffer abschmecken. Kurz aufkochen, damit die Soße etwas andickt.
  6. Die Zoodles vorsichtig unterheben und 1-2 Minuten in der Soße erhitzen. Dann genießen! 😉
