This post is a little summary of what I eat on a weekend day at home. I don’t like spending most of my time in the kitchen, so everything is super simple & easy to make! Generally, breakfast is my favorite meal of the day, so I put the most effort into it. 🙂 Lunch & dinner on the weekends are usually salads or veggies.
I know, but I had to. I haven’t made up my mind about fusion food yet – it always feels a bit wrong to me. But when I found out about sushi burritos, I just had to try them for myself. And I think they not only look pretty, but are also pretty tasty.
When it comes to cooking, I’m lazy. If there is any way to avoid a pile of dishes to clean up after, I will choose it. So naturally, I gravitate towards one-dish meals and shortcuts like this mugcake. You can whip it up in one mug and eat it straight out of there!
Ever since watching the movie “Green Fried Tomatoes”, I have been wanting to try this Southern classic. I have never actually found them on any menu, but eventually made them myself after Corey shared them on her Instagram.
When I make sushi, it always reminds me of my time in San Diego because that is where I made it for the first time. And I also had a sushi night with my 3 roomies there, when we all made sushi together, which was nice! 🙂
When first going vegan, it might be hard to find yummy and healthy vegan options for lunch at work or school, especially if you’re not privileged to have a big variety of options. I felt the same way again when I decided to go gluten-free for a few weeks, so meal prepping for work became a weekly ritual.
Sooo….pancakes. 🙂 If you have been following me on Instagram, you have had the pleasure of enjoying my pancake spam in the past few weeks. I basically use every free morning I get to make pancakes and have tried different variations every time!
I have been seeing countless variations of protein balls on Instagram – with matcha, chia, spirulina, maca… And you know me. I had to try them myself! So I made a pretty basic version for the start, with chia seeds and peanut butter.
I admit I’ve been having my troubles with vegan baking endeavors… One of my grandmothers used to have her own bakery, so she was a baker by trade. Whenever we visit her, we are served delicious homemade cakes. Since going vegan, I have been trying to bring baked vegan goods, but was always a little ashamed because they couldn’t keep up with her cakes in the slightest. I have tried a few vegan cakes, muffins and brownies and apart from this raw-vegan cheesecake (which technically doesn’t count as baking), I was never happy with the result. Never!
Ok guys, fall is slowly coming to an end, the nightly temperatures are dropping below zero and christmas decoration has hit the stores. But before we approach the colder season, I would like to give you one more fall recipe.
