Potato Soup

Potato broccoli soup

Winter time is soup time for me. And even though I don’t crave soup all too often, I sometimes need a warm bowl to nourish my body when it gets colder. This creamy potato soup hit the spot just right, as it integrates my favorite food – potatoes – in a healthy way.

Ingredients:

  • 1 white onion
  • 2 carrots
  • 2-4 cloves of garlic
  • 3 medium potatoes
  • 1 head of broccoli
  • 1 T olive oil
  • 4 cups veggie broth
  • 1 cup coconut milk
  • 1 – 2 t salt
Instructions:
  1. Peel & cut onion, carrots, potatoes & garlic.
  2. Wash broccoli & cut into smaller pieces.
  3. In a large pot, heat the olive oil over medium-high heat and then add carrots & onions. Sauté the veggies for a few minutes, then add the garlic and leave for another minute.
  4. Add potatoes & broth. Cover and let simmer for about 15-20 minutes until veggies are tender.
  5. In another pot, boil water and add the broccoli. Cook for 2-3 minutes, then drain.
  6. With an immersion blender, blend the soup until it is creamy & smooth. Add coconut milk and salt to taste.
  7. At last, add the broccoli and enjoy!

Zutaten:

  • 1 weiße Zwiebel
  • 2 Karotten
  • 2-4 Knoblauchzehen
  • 3 mittelgroße Kartoffeln
  • 1 Brokkoli
  • 1 EL Olivenöl
  • 1 L Gemüsebrühe
  • 250 ml Kokosmilch
  • 1 – 2 TL Salz
Zubereitung:
  1. Zwiebel, Karotten, Kartoffeln & Knoblauch schälen und klein schneiden.
  2. Brokkoli waschen und in kleine Röschen schneiden.
  3. In einem großen Topf das Olivenöl erhitzen und auf mittlerer-hoher Stufe die Karotten & Zwiebeln hinzufügen. Gemüse für ein paar Minuten andünsten und dann Knoblauch für eine weitere Minute dazu geben.
  4. Kartoffeln & Brühe hinzu geben. Topf abdecken und für 15-20 Minuten köcheln lassen, bis das Gemüse durch ist.
  5. In einem zweiten Topf Wasser zum kochen bringen, dann Brokkoli für 2-3 Minuten kochen und dann abgießen.
  6. Die Suppe nun mit einem Stabmixer mixen, bis sie glatt & cremig ist. Kokosmilch dazu geben und mit Salz abschmecken.
  7. Zum Schluss den Brokkoli dazu geben und genießen!
