Strawberry Cinnamon Roll Mugcake

Yup, this is basically a mini cake for one. Or baked oatmeal in a mug. Whatever you want to see it as, mugcakes are the perfect dessert or afternoon snack – easy and quick to make and super indulgent!

Just like pancakes, you can create endless variations of these and incorporate whatever you have at hand. I like to make mugcakes either with protein powder as a post-workout snack or as an afternoon snack to get me through the day.

Ingredients:

  • 0.5 cup oats
  • 2 tbsp coconut flour
  • 1 tsp cinnamon
  • 1 tbsp coconut sugar
  • 0.25 tsp vanilla
  • 0.5 tsp baking powder
  • 1 tsp maca (optional)
  • (vanilla) oat milk
  • fresh strawberries

Instructions:

  1. Mix all dry ingredients. Add just enough milk to form a thick batter.
  2. In a heat resistant bowl or mug, microwave the mix for about 1.5- 2 minutes (around 600W), until dough starts to rise.
  3. Serve with fresh strawberries, add chia seeds & maple syrup if you like!

Zutaten:

  • 40 g Haferflocken
  • 2 EL Kokosmehl
  • 1 TL Zimt
  • 1 EL Kokosblütenzucker
  • 0.25 TL Vanille
  • 0.5 TL Backpulver
  • 1 TL Maca (optional)
  • (Vanille) Hafermilch
  • frische Erdbeeren

Zubereitung:

  1. Die trockenen Zutaten vermischen. Gerade so viel Milch hinzufügen, bis eine zähe Masse entsteht, diese gut mischen.
  2. In einem hitzebeständigen Gefäß/Tasse die Mischung für etwa 1.5- 2Minuten in der Mikrowelle erhitzen (bei etwa 600W), bis sich der Teig leicht hebt.
  3. Mit frischen Erdbeeren, und nach Belieben Chia Samen & Ahornsirup servieren!
