Yup, this is basically a mini cake for one. Or baked oatmeal in a mug. Whatever you want to see it as, mugcakes are the perfect dessert or afternoon snack – easy and quick to make and super indulgent!
There was this one day when I thought to myself: I eat chocolate oatmeal almost every day. I love white chocolate. Why have I never tried white chocolate oats?!? So I made white chocolate oats. And they were every bit as heavenly and delicious as I imagined. No actually – they were soo much better!!
To give you a better impression of what I eat on a day when I am home and able to cook for myself, I thought I could start a “What I Eat In A Day”- series. So here is a compilation of what I ate on a particular day in March. Let me know if you like these kinds of posts and want to see more of them!
I can’t even put into words how happy I am to have found a solid vegan pancake recipe that actually works out every time. I am using the Gingerbread Pancake recipe and swapping the gingerbread spice with whatever I feel like that day.
I have been seeing countless variations of protein balls on Instagram – with matcha, chia, spirulina, maca… And you know me. I had to try them myself! So I made a pretty basic version for the start, with chia seeds and peanut butter.
I usually take my overnight oats to work in the morning because I don’t have time to make breakfast before I leave. Whenever I have time in the morning however, I make a green smoothie to give my body an extra boost of nutrients. And my immune system has thanked me so far.
I admit I’ve been having my troubles with vegan baking endeavors… One of my grandmothers used to have her own bakery, so she was a baker by trade. Whenever we visit her, we are served delicious homemade cakes. Since going vegan, I have been trying to bring baked vegan goods, but was always a little ashamed because they couldn’t keep up with her cakes in the slightest. I have tried a few vegan cakes, muffins and brownies and apart from this raw-vegan cheesecake (which technically doesn’t count as baking), I was never happy with the result. Never!
I’m a true smoothie-lover. Most of the time I make green smoothies because I use every opportunity to incorporate more healthy greens into my diet. But this one particular morning we had some coconut milk, apple sauce and blueberries left over and I ended up with the best smoothie I’ve ever made. I kid you not. I was super impressed, so I had to share the recipe! 🙂
I know, I know. Christmas is over… BUT winter is not and I think winter is gingerbread season! It just got really cold here in Germany and I am more than ever craving those hot chai teas and warm breakfast pancakes!
Oatmeal is definitely my go-to choice when it comes to fixing a quick and easy breakfast. Most of the time, I prepare my oats in a jar the night before and then take them to work the next morning.
