Ever since going vegan, I have gotten a blood test done on average once per year. Even though I know I am eating a more balanced and healthy diet than ever before in my life, I have become more aware of the connection between diet and health, and want to be sure my body has all the nutrients it needs.
The end of year holidays are over, and most of us have gotten into a rut of eating more than we need or want to eat. Also, January is a time to reset, to make plans for the coming year, and to start fresh. It’s a time to not only reset your mind, but also your body. And how better to do this than with a detox!
If you’re still looking for a breakfast for Christmas, I have the perfect suggestion for you. These gingerbread pancakes are based on the first gingerbread pancake recipe I posted, but I topped them off with some fried cinnamon apples & pieces of gingerbread. They taste like Christmas on a plate! 🙂
Yup, this is basically a mini cake for one. Or baked oatmeal in a mug. Whatever you want to see it as, mugcakes are the perfect dessert or afternoon snack – easy and quick to make and super indulgent!
There was this one day when I thought to myself: I eat chocolate oatmeal almost every day. I love white chocolate. Why have I never tried white chocolate oats?!? So I made white chocolate oats. And they were every bit as heavenly and delicious as I imagined. No actually – they were soo much better!!
I usually take my overnight oats to work in the morning because I don’t have time to make breakfast before I leave. Whenever I have time in the morning however, I make a green smoothie to give my body an extra boost of nutrients. And my immune system has thanked me so far.
I’m a true smoothie-lover. Most of the time I make green smoothies because I use every opportunity to incorporate more healthy greens into my diet. But this one particular morning we had some coconut milk, apple sauce and blueberries left over and I ended up with the best smoothie I’ve ever made. I kid you not. I was super impressed, so I had to share the recipe! 🙂
In the last few weeks, I have dramatically reduced my Nicecream consumption. Now that it’s a little bit colder, I am preferring oats for breakfast instead of the cooling Nicecream I ate during the summer.. However, I still like to eat it for dessert. 🙂 This green Nicecream is perfect for the afternoon – it wakes you up and gives you an extra energy boost for the rest of the day!
When I get the frozen bananas out of my freezer, it’s usually to make Nicecream. But this particular summer day, I just wanted a chocolate milkshake. Sometimes I miss having milkshakes. I used to love getting chocolate or vanilla milkshakes at fastfood restaurants when I was younger! But thinking about all the unhealthy & nasty stuff they put in there, I don’t feel the need to go there anymore. Much to my surprise, I created this absolutely delicious, thick and HEALTHY vegan chocolate milkshake!
I usually drink my smoothies out of a glass. But after seeing smoothie bowls everywhere on Instagram, I had to give this a try! If anything, smoothie bowls can be decorated a lot prettier than smoothies.. 🙂 This one I made after a run and packed it with plenty of superfoods to nourish my body with some iron, magnesium, fiber and lots of other nutrients it was craving after the exercise. Smoothies are definitely the easiest way to get your daily fruit & veggie servings! Ingredients: 1/2 frozen banana 1 apple 2 big leaves of swiss chard 1/2 lemon handful of oats* 1/2 tsp spirulina a dash of plant milk (depending on preferred thickness) toppings of your liking (in the photos I used hemp hearts, chia seeds, goji berries, raspberries and pomegranate) *use gluten-free oats & milk to make gluten-free Instructions: Wash and cut fruit/veggies, squeeze lemon and combine all ingredients in a blender.
