After having overnight oats for breakfast every day of the week for a few years (and pancakes or oatmeal on the weekends), I’m now experimenting more with different foods for breakfast. Sweet potatoes are one of my favorites because they’re naturally lightly sweet and easy to combine with other breakfast foods, like coconut yogurt and granola.
I was sick last week, and basically lived off of fruits, vegetables and ginger until I started feeling better. Instead of taking medicine, I gave my body rest and healthy food and that was all it needed to fight the cold.
The first time I discovered Poké Bowls was actually after coming to Amsterdam for the first time. I love the taste of vegan sushi, but am too lazy to make sushi myself often and don’t want to go out or order it every week. This sushi in a bowl tastes just as amazing as sushi itself, but is much easier to make, so it’s a quick win for me!
When I make sushi, it always reminds me of my time in San Diego because that is where I made it for the first time. And I also had a sushi night with my 3 roomies there, when we all made sushi together, which was nice! 🙂
I love chickpeas because of their consistency and versatility! You can make hummus out of them, marinate them or roast them with spices. Chickpeas are rich in fiber, protein and manganese and can help to increase satiety, boost digestion and help to keep blood sugar levels stable. They are a real multitalent for the vegan diet!
This past easter, we were discussing what to have as an easter meal. Of course, any traditional dish involving meat was off the table and we couldn’t think of a particular dish that seemed fitting for easter. So we ended up just cooking what we felt like eating and it turned out delicious!
To give you a better impression of what I eat on a day when I am home and able to cook for myself, I thought I could start a “What I Eat In A Day”- series. So here is a compilation of what I ate on a particular day in March. Let me know if you like these kinds of posts and want to see more of them!
Although I find myself eating much healthier than before I was vegan, I do crave the occasional “junk food” now and then. For those exact situations, these tempeh nuggets come in pretty handy.
These quesadillas are the perfect comfort food to me! They are easy to make and so satisfying. If you want to make them a little healthier, just add some fresh baby spinach in the quesadillas or a salad on the side! They are also great to prepare in advance and take to work/school the next day.
I love burgers! I always have. That hasn’t changed since I went vegan because there are plenty of options to make a vegan burger. In the beginning I just got those veggie patties from the store, but ever since making these sweet potato patties, those store-bought ones have lost their appeal…
