Apple Broccoli salad with Cranberries

My mom says you shouldn’t eat raw broccoli, but I still do it. 🙂
Most of the time just dipped in hummus, but now also in the form of this salad. The apple & cranberry add sweetness and the red onion makes it a bit spicy.  I ate this as a main meal, but you can easily make it as a side for another dish.

Ingredients:

For the Salad:

  • 1 head of broccoli
  • 1 – 2 organic apples
  • 1/2 red onion
  • 1/2 cup cranberries
  • 1/2 cup sunflower seeds

For the Dressing:

  • 1/8 cup (30 ml) apple cider vinegar
  • 1/4 cup (60 ml) olive oil
  • 1 tsp tahin
  • 1 clove garlic minced
  • 1 Tbsp maple syrup
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Wash broccoli and cut the florets from the stalks and into small pieces. Cut the hard outer skin off of the stems and cut the tender inside stems into match sticks. Discard the outer skin.
  2. Add everything to a large bowl.
  3. Dice the red onion. Wash & slice apples and add onion, apples, cranberries & seeds to the broccoli.
  4. Whisk together all ingredients for the dressing and toss the salad in the dressing.

Zutaten:

Für den Salat:

  • 1 Kopf Brokkoli
  • 1 – 2 Bio Äpfel
  • 0.5 rote Zwiebel
  • Kleine handvoll Cranberries
  • Kleine handvoll Sonnenblumenkerne

Für das Dressing:

  • 30 ml Apfelessig 
  • 60 ml Olivenöl
  • 1 TL Tahin
  • 1 Knoblauchzehe, gepresst oder gehackt
  • 1 EL Ahornsirup
  • 0.5 TL Salz
  • 0.25 TL schwarzer Pfeffer

Zubereitung:

  1. Brokkoli waschen und in kleine Stücke schneiden. Die harte Haut um den Strunk abschneiden und das innere des dicken Strunks in kleine Streifen schneiden, die dickere Haut entsorgen.
  2. Alles in eine große Schüssel geben.
  3. Rote Zwiebel hacken. Äpfel waschen und in kleine Scheiben schneiden und die Zwiebel, Äpfel, Cranberries & Kerne zum Brokkoli geben.
  4. Alle Zutaten für das Dressing verrühren und den Salat gut darin vermengen.
