These noodles were on my menu pretty much once a week when I first went vegan because they are easy to make and pretty tasty. 🙂 You can eat them with a fresh, green salad on the side, or add cooked/ roasted veggies. Roasted green asparagus for instance is delicious with it!
Ingredients:
- 250g rice noodles
- 2 tbsp peanut butter
- 1.5 tbsp soy sauce
- 1 tbsp tahini
- 1 tbsp rice vinegar
- 1.5 tbsp maple syrup
- 1 clove garlic (minced)
- 1/2 tsp fresh ginger (minced or grated)
- 2 tbsp sesame (or olive) oil
Instructions:
- Cook the noodles until they are almost soft.
- Whisk together 1 tbsp oil, peanut butter, soy sauce, tahini, rice vinegar, maple syrup, garlic and ginger.
- In a skillet, fry the noodles in 2 tbsp oil for 3-5 minutes or until noodles are soft.
- Pour peanut sauce over noodles and fry for another minute. You can eat these warm or cold.
