Lentil Soup

Lentil soup

This lentil soup is another recipe for the colder fall days, which we have been getting quite a few of here in Germany in the past weeks. It’s pretty simple, yet nourishing and warming. Lentils should be one of the main foods of a vegan diet and soups like this one are a great way to incorporate them.

Ingredients:

  • 250 g brown lentils (dry)
  • 2 tomatoes
  • 1 clove garlic
  • 60 ml olive oil
  • 4 bay leaves
  • handful of parsley
  • 2 tbsp lemon juice
  • sea salt
  • pepper

Instructions:

  1. Soak lentils in cold water for at least 2 hours (or over night). Peel & crush garlic.
  2. Drain lentils and heat in a pot together with 1 l of water, bay leaves and garlic. Bring to a boil, then let simmer on medium heat for 30 minutes, stirring occasionally.
  3. Stir in about 30 ml olive oil and add lemon juice, salt & pepper to taste.
  4. Wash & chop parsley and cut tomatoes into cubes.
  5. On a plate, garnish the lentil soup with parsley, tomatoes and some olive oil. Enjoy!

Zutaten:

  • 250 g braune Tellerlinsen (trocken)
  • 2 Tomaten
  • 1 Knoblauchzehe
  • 60 ml Olivenöl
  • 4 Lorbeerblätter
  • Handvoll Petersilie
  • 2 EL Zitronensaft
  • Meersalz
  • Pfeffer

Zubereitung:

  1. Linsen mindestens 2 Std. in kaltes Wasser einweichen (oder über Nacht). Knoblauch schälen und pressen.
  2. Linsen abgießen und zusammen mit 1 L Wasser, Lorbeerblättern und Knoblauch in einen Topf geben. Alles kurz aufkochen und dann für 30 Minuten bei mittlerer Hitze köcheln lassen. gelegentlich umrühren.
  3. Etwa 30 ml Olivenöl dazu geben und mit Salz, Pfeffer & Zitronensaft abschmecken.
  4. Petersilie waschen & hacken und Tomaten würfeln.
  5. Suppe auf Tellern mit Petersilie, Tomaten und Olivenöl nach Belieben anrichten. Guten Appetit!
