If you are anything like me, you could eat oats every morning without getting tired of them. I don’t even need much variation – I am just looking forward to my chocolate oats from the moment I wake up.
But on the weekends, I like to take advantage of the time I have and invest it in preparing a bit more elaborate breakfasts. This time, I decided to roll my oats up in little balls and bake them in a gooey caramel paste. 🙂
I was inspired by a recipe I found on Pinterest by Feasting on Fruit, which looked incredibly mouth-watering and illustrated a very unusual way of enjoying the usual morning oats.
Ingredients:
Date Paste
- 8 Medjool dates
- 1/3 cup water
- 1 tbsp cashew butter (or other nut butter)
Caramel Paste
- half of the date paste (above)
- 1 tsp maple syrup
- 1/2 tsp cinnamon
Dough
- 25 g oat flour (ground oats)
- 15 g unflavored protein powder (optional; can sub with more oat flour)
- ¼ cup date paste (above)
- 2 tbsp tapioca starch (or cornstarch)
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
- Blend the dates, water & cashew butter for the date paste. Add a bit more water if necessary – the paste should be smooth but fairly thick.
- Mix together the ingredients for the dough. It should be quite dry and sticky, so that you can form balls out of it.
- Take half of the date paste and mix it with the maple syrup & cinnamon in a small bowl.
- Take a small piece of dough and roll it into a ball. Roll it in the caramel paste so that it is evenly covered. Place the ball in a small heat-resistant ramekin. Do the same with the rest of the dough.
- Microwave for 1 to 1.5 minutes on high or bake in the oven for 15-20 mins at 375 °F (I used the oven).
- Pour the remaining caramel paste over it & top with a bit of cinnamon. Enjoy!

Zutaten:
Dattelmus
- 8 Medjool Datteln
- 60 – 80 ml Wasser
- 1 EL Cashewmus (oder anderes Nussmus)
Caramelcreme
- die Hälfte des Dattelmus (oben)
- 1 TL Ahornsirup
- 1/2 TL Zimt
Teig
- 15 g Proteinpulver ohne Geschmack (optional; can mit Hafermehl ersetzt werden)
- 25 g Hafermehl (gemahlene Haferflocken)
- ¼ des Dattelmus (oder mehr nach Bedarf)
- 2 tbsps Tapiokastärke (oder Maisstärke)
- 1/2 TL Backpulver
- 1 TL Vanille
- Prise Salz
Zubereitung:
- Datteln, Wasser & Cashewmus in einem Mixer zu Dattelmus verarbeiten. Bei Bedarf noch ein wenig Wasser dazu geben – aber nur so viel, dass das Mus cremig, aber noch dickflüssig ist.
- Alle Zutaten für den Teig vermischen. Er sollte trocken und klebrig sein, sodass man daraus gut Kugeln formen kann.
- Die Hälfte der Dattelpaste in einer kleinen Schale mit dem Ahornsirup & Zimt vermischen.
- Eine kleine Menge des Teiges herausnehmen und daraus eine kleine Kugel formen (ca. 2-3 cm Durchmesser). Diese nun im Dattelmus rollen, sodass sie gleichmäßig bedeckt ist. Nun die klebrige Kugel in eine Mini-Ofenform legen. Genauso mit dem Rest des Teiges verfahren, bis er komplett zu Kugeln verarbeitet ist.
- Für 1 – 1.5 Minuten auf hoher Stufe in der Mikrowelle erhitzen, oder für 15-20 Minuten bei 180°C im Ofen backen (ich habe es im Ofen gebacken).
- Herausnehmen und das restliche Dattelmus darüber geben und mit Zimt garnieren. Mmhhh!
