I like meals that consist of just a big bunch of veggies & grains in a bowl. They’re simple, they taste good and they are super nutritious. This thai-inspired bowl packs loads of protein thanks to the quinoa and is a light summer meal!
Ingredients:
- 1,5 cups (210g) quinoa
- 1/3 head broccoli
- 1 small red onion
- 1 medium carrot
- peanuts for garnish
For the dressing:
- 1 small lime
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tsp sesame seeds
- 1 clove garlic
Instructions:
- Cook quinoa according to package instructions.
- Chop garlic & onion and cut broccoli into small pieces. Cut carrot with a spiralizer.
- Combine everything in a big bowl.
- In a small bowl, combine dressing ingredients. Pour dressing over quinoa and mix until combined.

- 1 mittelgroße Karotte
- Erdnüsse zum Garnieren
Für das Dressing:
- 1 kleine Limette
- 2 EL Sojasoße
- 2 EL Reisessig
- 2 TL Sesamsamen
- 1 Knoblauchzehe
Zubereitung:
- Quinoa nach Packungsanweisung kochen.
- Knoblauch & Zwiebel hacken und Brokkoli in kleine Stücke schneiden. Karotte mit dem Spiralschneider schneiden.
- Alles in einer großen Schüssel vermischen.
- In einer kleinen Schüssel die Zutaten für das Dressing vermischen. Dressing über das Quinoa geben und gut vermischen.
