Quinoa Bowl

Veggie Quinoa Bowl

I like meals that consist of just a big bunch of veggies & grains in a bowl. They’re simple, they taste good and they are super nutritious. This thai-inspired bowl packs loads of protein thanks to the quinoa and is a light summer meal!

Ingredients:

  • 1,5 cups (210g) quinoa
  • 1/3 head broccoli
  • 1 small red onion
  • 1 medium carrot
  • peanuts for garnish

For the dressing:

  • 1 small lime
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tsp sesame seeds
  • 1 clove garlic

Instructions:

  1. Cook quinoa according to package instructions.
  2. Chop garlic & onion and cut broccoli into small pieces. Cut carrot with a spiralizer.
  3. Combine everything in a big bowl.
  4. In a small bowl, combine dressing ingredients. Pour dressing over quinoa and mix until combined.

Zutaten:

  • 210g Quinoa
  • 1/3 Kopf Brokkoli
  • 1 kleine rote Zwiebel
  • 1 mittelgroße Karotte
  • Erdnüsse zum Garnieren

Für das Dressing:

  • 1 kleine Limette
  • 2 EL Sojasoße
  • 2 EL Reisessig
  • 2 TL Sesamsamen
  • 1 Knoblauchzehe

Zubereitung:

  1. Quinoa nach Packungsanweisung kochen.
  2. Knoblauch & Zwiebel hacken und Brokkoli in kleine Stücke schneiden. Karotte mit dem Spiralschneider schneiden.
  3. Alles in einer großen Schüssel vermischen.
  4. In einer kleinen Schüssel die Zutaten für das Dressing vermischen. Dressing über das Quinoa geben und gut vermischen.
