Rainbow Sushi Burritos

Vegan Sushi Burrito

I know, but I had to.

I haven’t made up my mind about fusion food yet – it always feels a bit wrong to me. But when I found out about sushi burritos, I just had to try them for myself. And I think they not only look pretty, but are also pretty tasty.

I would recommend rolling them inside out, like I did in the photos, because not everyone (=me) likes to bite straight into the nori sheets. There are unlimited options for different variations, so just play around with different fillings and go for a multitude of colors! I might have gone a little crazy with the pink rice, but you know….if I’m already making a suhi burrito, why not make it a rainbow sushi burrito?!

Ingredients (~3 burritos):

  • 1 cup sushi rice
  • Nori sheets

Filling: whatever you like, for example

  • Smoked tofu (200g), cut into strips
  • 1 sweet potato, cooked and cut into strips
  • 1 avocado
  • Sweet corn
  • Pickled celeriac
  • Beetroot
  • Sriracha
  • Sesame seeds

Instructions:

  1. Cook sushi rice according to package instructions and let cool for a few hours.
  2. Put a nori sheet on a sushi rolling mat or a piece of baking paper. Now dampen your hands, grab some sushi rice and spread it on the nori sheet. Press it to the sheet evenly.
    If you are rolling inside out (shown in the photos above), cover the whole sheet. For inside in (in the photos below), leave a strip of about 1/2 inch free so that you can close the burrito. 
  3. About an inch from the end of the nori sheet, place your filling of choice. You can even spread it over almost the whole sheet.
  4. Start rolling up the burrito while holding the filling in place with your fingers. Make sure you apply enough pressure. For a demonstration of how to roll it, watch the end of THIS VIDEO. I would then wrap the burrito in baking paper while pressing it together from all sides and then cut it in half with a sharp knive. Enjoy with soy sauce or sriracha at home or on the go.

  1. I drizzled some beetroot juice on the rice to color it pink.

Zutaten:

  • 1 kleine Tasse Sushi Reis
  • Nori Blätter

Füllung: je nach Geschmack, zum Beispiel

  • Geräucherter Tofu (200g)
  • 1 Süßkartoffel
  • 1 Avocado
  • Mais
  • Selleriesalat
  • Rote Beete
  • Sriracha
  • Sesam

Zubereitung:

  1. Sushi Reis nach Packungsanweisung kochen und ein paar Stunden auskühlen lassen.
  2. Ein Nori Blatt auf eine Sushi Matte oder ein Stück Backpapier legen. Hände anfeuchten und eine handvoll Reis auf dem Nori Blatt ausbreiten. Gleichmäßig etwa einen halben Centimeter hoch verteilen und andrücken.Wenn du inside out rollst (so wie in den Fotos oben), das ganze Nori Blatt bedecken. Bei inside in (wie auf den letzten beiden Fotos), einen etwa 2cm breiten Streifen am Ende des Blattes frei lassen, damit du den Burrito gut schließen kannst.
  3. Nun die Füllung auf dem Nori Blatt verteilen. Du kannst sie mehr ausbreiten, als ich es auf dem letzten Foto gemacht habe. 
  4. Nun den Burrito vorsichtig aber mit genügend Druck rollen während du die Füllung mit den Fingern fixierst. Für eine Demonstration kannst du dir das Ende DIESES VIDEOS ansehen. Dann den Burrito in Backpapier einwickeln und noch einmal von allen Seiten zusammendrücken, dann mit einem scharfen Messer halbieren. Zum Beispiel mit Sriracha oder Sojasoße unterwegs oder zuhause genießen.
