I love burgers! I always have. That hasn’t changed since I went vegan because there are plenty of options to make a vegan burger. In the beginning I just got those veggie patties from the store, but ever since making these sweet potato patties, those store-bought ones have lost their appeal…
Don’t be scared off by the list of ingredients, it’s mostly seasoning! You basically only need a sweet potato, black beans and corn (the rest is pretty much spices). If you’re a fan of sweet potato (I sure am), these burgers will definitely hit the spot! They’re easy to make and full of flavor my favorite vegan burgers so far! 🙂
Ingredients:
- 1 small white onion (finely chopped)
- 1 medium sweet potato (peeled, diced)
- 2 heaping tbsp of sweet corn
- 3 heaping tbsp of beans (I used black beans)
- 6 tbsp breadcrumbs (careful not all breadcrumbs are vegan)
- 1 large clove of garlic (crushed)
- 1⁄4 tsp cumin
- 1⁄2 tsp thyme
- 1 tsp paprika
- 1⁄2 tsp salt
Instructions:
- Preheat oven to 225°C (440°F) and line a baking pan with parchment paper.
- Cook the sweet potato until soft.
- Mash potato in a big bowl and add chopped onion, garlic and spices.
- Add corn, beans, and breadcrumbs to sweet potato mixture. Mix well with hands and
- Form into 4 large patties.
- Place on parchment paper lined baking pan and bake for 15 minutes on one side, flip, and bake for an additional 10 minutes.
- Remove burgers from oven, serve on buns with onions, tomato, lettuce, avocado and vegan cheese if you like!
