Sweet Potato Burgers

I love burgers! I always have. That hasn’t changed since I went vegan because there are plenty of options to make a vegan burger. In the beginning I just got those veggie patties from the store, but ever since making these sweet potato patties, those store-bought ones have lost their appeal…

Don’t be scared off by the list of ingredients, it’s mostly seasoning! You basically only need a sweet potato, black beans and corn (the rest is pretty much spices). If you’re a fan of sweet potato (I sure am), these burgers will definitely hit the spot! They’re easy to make and full of flavor my favorite vegan burgers so far! 🙂

Ingredients:

  • 1 small white onion (finely chopped)
  • 1 medium sweet potato (peeled, diced)
  • 2 heaping tbsp of sweet corn
  • 3 heaping tbsp of beans (I used black beans)
  • 6 tbsp breadcrumbs (careful not all breadcrumbs are vegan)
  • 1 large clove of garlic (crushed)
  • 1⁄4 tsp cumin
  • 1⁄2 tsp thyme
  • 1 tsp paprika
  • 1⁄2 tsp salt

Instructions:

  1. Preheat oven to 225°C (440°F) and line a baking pan with parchment paper.
  2. Cook the sweet potato until soft.
  3. Mash potato in a big bowl and add chopped onion, garlic and spices.
  4. Add corn, beans, and breadcrumbs to sweet potato mixture. Mix well with hands and
  5. Form into 4 large patties.
  6. Place on parchment paper lined baking pan and bake for 15 minutes on one side, flip, and bake for an additional 10 minutes.
  7. Remove burgers from oven, serve on buns with onions, tomato, lettuce, avocado and vegan cheese if you like!
