Simple Veggie Sushi

Veggie Sushi

When I make sushi, it always reminds me of my time in San Diego because that is where I made it for the first time. And I also had a sushi night with my 3 roomies there, when we all made sushi together, which was nice! 🙂

I already posted a recipe for cauliflower sushi here, but I wanted to get this recipe for classic veggie sushi to you as well. So here is the recipe for my favorite rolls with rice, avocado, cucumber & sweet potato!

Ingredients (about 10 rolls):

  • 3 cups sushi rice
  • 10 nori sheets
  • 2 tbsp rice vinegar

Veggies for filling. I used:

  • 1 small sweet potato
  • 1/4 cucumber
  • 1 carrot
  • 1 avocado

Instructions:

  1. Cook sushi rice according to package instructions. (I cooked the rice in 1 3/4 the amount of rice in water, brought it to a boil and let it simmer for 10 minutes, then turned off the heat and let it soak for another 10 minutes.) Add 2 – 3 tbsp rice vinegar and carefully mix into rice with a wooden spoon. Let the rice cool off completely.
  2. Cut vegetables into strips.
  3. Place 1 Nori sheet on a bamboo mat or parchment paper (I always cut the paper to the width of the Nori sheets, and a longer length). Spread rice on the sheet, about 0.5 cm thick. Place filling on the rice and roll up! Cut the roll into about 10 pieces and enjoy with soy sauce & wasabi (optional)!

Zutaten (etwa 10 Rollen):

  • 3 kleine Tassen Sushi Reis
  • 10 Nori Blätter
  • 2 EL Reisessig

Gemüse für die Füllung. Ich habe benutzt:

  • 1 kleine Süßkartoffel
  • 1/4 Gurke
  • 1 Karotte
  • 1 Avocado

Zubereitung:

  1. Sushi Reis nach Packungsanweisung kochen. (Ich habe ihn mit der 1 3/4-fachen Menge Wasser zum kochen gebracht und 10 Minuten auf niedriger Stufe köcheln lassen. Dann die Herdplatte abgeschaltet und 10 Minuten ziehen lassen.) 2-3 EL Reisessig hinzufügen und mit einem Holzlöffel vorsichtig unterrühren. Reis vollständig abkühlen lassen.
  2. Gemüse in längliche Streifen schneiden.
  3. Ein Nori Blatt auf einer Bambusmatte oder Backpapier platzieren (ich schneide das Backpapier immer in der Breite der Nori Blätter, aber etwas länger zu). Blumenkohl auf dem Blatt gleichmäßig verteilen, mit einer Dicke von etwa 0,5-1 cm. Nun die Füllung längs darauf platzieren und Rolle einrollen! Dann die Rolle in etwa 10 Stücke schneiden und Sushi mit Sojasauce und Wasabi (optional) genießen! Für genauere Anleitung, siehe Link unten.
