The first time I discovered Poké Bowls was actually after coming to Amsterdam for the first time. I love the taste of vegan sushi, but am too lazy to make sushi myself often and don’t want to go out or order it every week. This sushi in a bowl tastes just as amazing as sushi itself, but is much easier to make, so it’s a quick win for me!
Ingredients:
- 1 cup rice
- 1 sweet potato
- 1 avocado
- 1 glass/can of corn
- 1 block (ca. 200g) tofu
- nori sheets
- sesame
- pickled ginger
- whichever other toppings you like.

Instructions:
- Make the spicy peanut tofu.
- Cook rice according to package instructions.
- Cook the sweet potato until tender (ca. 25 minutes), then peel it and cut into small cubes. Cut avocado into small pieces and drain the corn. Cut the nori sheets into small squares.
- On a plate, serve a all toppings on a bed of rice and garnish with sesame and pickled ginger.
Zutaten:
- 1 Tasse Reis
- 1 Süßkartoffel
- 1 Avocado
- 1 Glas/Dose Mais
- ca. 200g Tofu
- Nori Blätter
- Sesam
- eingelegter Ingwer
- andere Toppings nach Belieben.

Zubereitung:
- Bereite den Tofu in Erdnussoße zu.
- Reis nach Packungsanweisung kochen.
- Die Süßkartoffel gar kochen (etwa 25 Minuten), dann kurz abkühlen lassen, schälen und in Würfel schneiden. Avocado ebenfalls in Würfel schneiden, den Mais abgießen. Nori Blätter in kleine Quadrate schneiden.
- Auf einem Teller alle Toppings auf einer Portion Reis anrichten und mit Sesam & eingelegtem Ingwer garnieren. Guten Appetit!
