Pea Soup
This split pea soup is easy to make and packed with healthy vegetables. For the pictures, I left the soup very thick, more like a purée, but you can add more water to give it a thinner consistency.

If you haven’t made this pasta sauce, you don’t know what tomato pasta is supposed to taste like. I used to be the kind of person that bought pasta sauce in a glass and heated it up in a pot. Yes, it’s better than pasta with ketchup, but the difference to THIS pasta sauce is just as much of a step upwards.
I tried my first real ramen in Japan last year and it was an experience – sitting around the bar overlooking the kitchen, in the traditional Japanese way. The vegan broth was filled with ramen noodles, tofu, spring onions, herbs and vegetables, and tasted amazing. I knew I had to try making my own ramen once I returned home.
I was sick last week, and basically lived off of fruits, vegetables and ginger until I started feeling better. Instead of taking medicine, I gave my body rest and healthy food and that was all it needed to fight the cold.
The end of year holidays are over, and most of us have gotten into a rut of eating more than we need or want to eat. Also, January is a time to reset, to make plans for the coming year, and to start fresh. It’s a time to not only reset your mind, but also your body. And how better to do this than with a detox!
It’s October! Fall has officially started, the temperatures have cooled off and I am writing this post from underneath a blanket on the couch, with a cup of hot tea in hand, a candle burning on the table and a dark & chilly evening unfolding outside.
If you are looking for an easy vegan meal to impress meat eaters with – this is it! This vegan ragu is so flavorful and spicy that is comes strikingly close to the original. And it is a quick go-to meal for when friends are coming over for dinner.
The first time I discovered Poké Bowls was actually after coming to Amsterdam for the first time. I love the taste of vegan sushi, but am too lazy to make sushi myself often and don’t want to go out or order it every week. This sushi in a bowl tastes just as amazing as sushi itself, but is much easier to make, so it’s a quick win for me!
My mom says you shouldn’t eat raw broccoli, but I still do it. 🙂 Most of the time just dipped in hummus, but now also in the form of this salad. The apple & cranberry add sweetness and the red onion makes it a bit spicy. I ate this as a main meal, but you can easily make it as a side for another dish.
I have to admit, I’m not quite ready for fall yet (granted I didn’t have a real summer), but I’m willing to see the positives and embrace the season! I can wear my nice coats again, snuggle up on the couch with a cup of tea on a rainy day, go to museums on the weekends and savour warm soups & curries!
