If you’re following my Instagram or have looked at this blog before, it’s easy to see that I’m a pancake lover. On the weekend, when I have time after a nice long yoga session, I whip up a stack of pancakes that keeps me full for half the day.
The only thing I hate about waffles is how much work they are to make. I’m a minimalist, and also a lazy chef, so storing an extra kitchen appliance that has only one purpose and is also a pain to clean, just doesn’t really appeal to me. That’s why I usually opt for pancakes when I’m feeling extra on the weekends (instead of waffles).
While it can make you feel amazing to eat healthy, and there are plenty of healthy AND delicious dishes, sometimes you are just craving something sweet or any kind of comfort food. If you still want to make it yourself, instead of just ordering a pizza, I have got you covered with these recipes!
If you’re still looking for a breakfast for Christmas, I have the perfect suggestion for you. These gingerbread pancakes are based on the first gingerbread pancake recipe I posted, but I topped them off with some fried cinnamon apples & pieces of gingerbread. They taste like Christmas on a plate! 🙂

I can’t even put into words how happy I am to have found a solid vegan pancake recipe that actually works out every time. I am using the Gingerbread Pancake recipe and swapping the gingerbread spice with whatever I feel like that day.
I know, I know. Christmas is over… BUT winter is not and I think winter is gingerbread season! It just got really cold here in Germany and I am more than ever craving those hot chai teas and warm breakfast pancakes!
