Vegan Waldorf Salad

This is a vegan version of the classic Waldorf salad. It’s a really juicy and refreshing side dish and what I liked was mixing it with some lettuce. Then you have a mixed salad and you don’t need a dressing for the lettuce because the Waldorf salad is juicy enough!

Ingredients:

  • 350g celery root
  • 2 apples
  • 100g cranberries
  • 220g soy yogurt
  • 2 tbsp walnut oil
  • 1 lemon: 1 tbsp juice & some peel
  • sea salt & pepper

For the walnuts:

  • 60g walnuts
  • 1 tbsp agave syrup (or maple if you want)
  • 1/2 tsp gingerbread spice
  • sea salt

Instructions:

  1. Preheat oven to 430°F.
  2. Chop walnuts and mix with agave sirup, gingerbread spice and a pinch of salt.
  3. Bake in the oven for 10 minutes. (for instance in a baking pan)
  4. Peel celery root and grate. Wash apples and grate as well.
  5. Mix together celery, apples, cranberries, lemon peel & juice, soy yogurt and walnut oil in a bowl. Salt & pepper to taste.
  6. Serve and sprinkle with the gingerbread walnuts!

  2. Chop walnuts and mix with agave sirup, gingerbread spice and a pinch of salt.
  3. Bake in the oven for 10 minutes. (for instance in a baking pan)
  4. Peel celery root and grate. Wash apples and grate as well.
  5. Mix together celery, apples, cranberries, lemon peel & juice, soy yogurt and walnut oil in a bowl. Salt & pepper to taste.
  6. Serve and sprinkle with the gingerbread walnuts!

German recipe: 

 

Zutaten:

  • 350g Knollensellerie
  • 2 Äpfel
  • 100g Cranberries
  • 220g Sojajoghurt
  • 2 EL Walnussöl
  • 1 Bio Zitrone: 1 EL Saft & etwas abgeriebene Schale
  • Meersalz & Pfeffer

Für die Walnüsse:

  • 60g Walnusskerne
  • 1 EL Agavendicksaft
  • 1/2 TL Lebkuchengewürz
  • Meersalz

Zubereitung:

  1. Backofen auf 200°C Ober-/Unterhitze vorheizen.
  2. Walnüsse grob hacken und mit Agavendicksaft, Lebkuchengewürz und einer Prise Salz vermengen.
  3. In einer kleinen Backform für 10 Minuten im Ofen backen.
  4. Sellerie schälen und reiben. Äpfel waschen und ebenfalls reiben.
  5. Sellerie, Äpfel, Cranberries, Zitronensaft & -schale, Sojajoghurt und Walnussöl in einer Schüssel vermischen und mit Salz & Pfeffer abschmecken.
  6. Servieren und mit den gebackenen Walnüssen bestreuen!
