This post is a little summary of what I eat on a weekend day at home. I don’t like spending most of my time in the kitchen, so everything is super simple & easy to make! Generally, breakfast is my favorite meal of the day, so I put the most effort into it. 🙂 Lunch & dinner on the weekends are usually salads or veggies.
For breakfast I made a monkey bread mug cake with caramel sauce, which tasted so amazing that I could have eaten 2!
And I start almost every Saturday with a superfood smoothie. This one was made from 1 banana, a handful of berries, 1/2 lemon, some water, 1 Tbsp flax seeds, 1 tsp chlorella and 1/2 tsp each of spirulina, wheatgrass & baobab.
For lunch I threw together a super simple salad with lettuce, pickled beet, chickpeas (straight from the can) and a dressing from 1/2 lemon, some pepper & 1 tsp tahin.
For dinner I went to my mom’s house and we grilled some green asparagus & carrots on the barbecue and served them on a bed of lettuce, quinoa, beetroot, avocado, baked sweet potato chips & pomegranate. I also topped it with a little bit of the dressing from lunch.
